
Classic oatmeal cookies, what more needs to be said? These are deliciously chewy and chock full of oats. I personally love to add just a hint of nutmeg to mine. I’m not a big fan of raisins and my husband definitely hates them with a passion.
- 1/2 cup unsalted butter, softened
- 1 cup brown sugar, packed
- 1/4 cup granulated sugar
- 2 eggs
- 2 teaspoons vanilla extract
- 1 1/2 cups flour (spooned into cup and leveled)
- 1 tsp baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 3 cups old-fashioned oats (not quick cooking)
- 1/8 – 1/4 teaspoon nutmeg (optional)
- 1 cup chocolate chips or raisins (optional)
1. Preheat oven to 350. Line a baking sheet with parchment paper.
2. In stand mixer with paddle attachment, cream together butter and sugars for about 2 minutes, until thoroughly mixed.
3. Add eggs and vanilla and mix well.
4. Add remainder of ingredients and mix on low until combined.
5. Drop by rounded tablespoonfuls, spaced 2 inches apart, onto prepared baking sheet. Bake until edges just begin to turn brown, about 8-11 minutes. Let cool on pan for a few minutes, then transfer to wire rack to cool completely.
