Pumpkin Spice Donuts

To be honest, baked donuts are almost nothing like real donuts. However, they are donut shaped and delicious and I love them. This is a great recipe that really emphasizes the pumpkin spice. There’s plenty to customize. You can sub out the oil and milk for your choice, which gives the option for Vegan donuts! You can also roll the donuts in just a cinnamon sugar mixture or use the pumpkin pie spice for an extra array of flavors.

  • 1 cup + 1/4 cup flour
  • 1/2 cup brown sugar
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1/4 cup pumpkin puree
  • 2 1/2 tablespoons melted butter OR coconut oil
  • 1/2 cup milk

    Topping:
  • 3 tablespoons melted butter OR coconut oil
  • 1 cup sugar
  • 1 1/2 teaspoons pumpkin pie spice OR cinnamon

1. Preheat oven to 350 degrees. Grease donut pan and set aside.
2. In a large bowl, whisk together the dry ingredients.
3. In a separate medium bowl, whisk together the wet ingredients.
4. Gently fold wet mixture into dry mixture. Do not over-mix.
5. Spoon mixture into pan and bake 10-12 minutes, until toothpick comes out clean. Allow donuts to cool a few minutes in the pan before transferring to a wire rack to cool for a few more minutes.
6. Melt butter/oil for the topping in a shallow bowl and set aside. In a separate bowl, mix sugar and spice together.
7. Once donuts are cool, dip them in melted butter/oil and roll them in sugar spice mix.
